What sugar sag actually is
Sugar sag is glycation showing up on your face. Glycation is the non-enzymatic covalent bonding of a sugar molecule to a protein, no enzyme, no permission. In skin the target proteins are collagen (structure) and elastin (bounce). Sugar latches on, the protein gets damaged, and the visible payout is dull, slack, sagging skin and deeper wrinkles. Coined as a beauty term by derms, but the chemistry is real and named: the Maillard reaction, the same browning that happens to a steak.
The mechanism: Maillard reaction on your face
Step 1: a sugar binds collagen via a Schiff base reaction. Step 2: it rearranges into an Amadori product. Step 3 (irreversible): it matures into AGEs, advanced glycation end-products. AGEs are the boss enemy. They cross-link your collagen fibers, basically spot-welding strands that are supposed to glide. Cross-linked collagen does two bad things at once per the literature: it stiffens AND it weakens. Stiff means no snap-back, weak means it tears and droops. That's sag.
